Although boring, I recommend electric. Nothing is more annoying than constantly monitoring the oil temperature. It may take longer to heat up, but it's more consistent.

Place the oil into a 28 to 30-quart pot and turn on the unit. Once it reaches 350°F, place the turkey in. After 30 minutes, check the temperature. Once the breast is 151, gently remove from the oil and allow the turkey to rest for 30 minutes. The bird will reach an internal temp of 161°F due to carry over cooking.
